Genes are basically like spaghetti code and when you change something the body just goes "no wait it's supposed to be like this". Because if you edit the genome in one place, it affects how phenotypes are expressed in a totally different area. That's what happened with that chinese scientist who used crispr to make children that were more resistant to a certain disease(I think it was hiv or something) but it ended up making them way more susceptible to another disease
