Funny thing is that I tried out making yogurt by using different yogurt company's bacteria. - I took a sample of each - placed each sample in a container - added the same amount of sterlized (boiled, then cooled) milk for each container - left them for 24 hours in a dark and warm place, and covered with cheese-cloth The results are not the same. Each yogurt tastes different and formed differently. Some are slimier than others, some are stickier (like kefir), and some are dried/cracked (like a tufo).
