I would have thought its because salad is higher in water content and served cold so its nice in hot weather compared to a cooked steak.

Perhaps cause and effect are backwards? During warmer periods, did plants grow more readily, so they were more available to animals for consumption?

Thereā€™s also the fact that protein takes more energy to break down. I think thereā€™s been recent studies suggesting the ā€œ4 calories per gramā€ number associated with how much energy you get from protein should actually be lower based on how much energy it takes to actually break down. See also: getting ā€œthe meat sweatsā€ after high protein meals

I don't think it's about effort like a lot of the comments are saying, because humans have the same tendency. Plants, on average, tend to have more water content, while meat can sometimes dehydrate you (especially with how much we humans tend to salt our foods). Everyone looks for more hydration in the summertime.

Our body temp is regulated, we donā€™t low our temperature when it is cold and rise when itā€™s hot (like a lizard do) So the bacteria in the gut digesting plants better at warmer temperature doesnā€™t apply to real life, where the bacteria is always inside our stomach and not suffer environmental temperature fluctuations
