Here is my take. Is cucumber delicious for some people? Yes. Is it absolutely fine to eat? Yes. Is it spaghetti? No. Does it taste like spaghetti? No. Is it a replacement for spaghetti? No. Edit: yes it’s a zucchini but you get my point

I actually really love zucchini noodles BECAUSE they're zucchini!!! I love using them in recipes that use the fresh green veggie-ness of them to add to the flavor. Of course, id never use it to try and replace a carb, because its way less filling, but combined with kale and spinach and chicken in a lemongrass flavored broth it makes for a really delicious soup! Very fresh, very green, ans if you just add in maybe bread or crackers on the side, you've got carbs!!! It also helps in the middle of summer when you have those giant zucchini from the garden and think that zucchini bread is too much work.

I do love zoodles (you can also do it with butternut squash or sweet potato) but ive never used them to actual replace noodles. Too much water. But great side dish if you stir fry with cherry tomatoes, pine nuts, and a little balsmic glaze.

I really like zoodles as a base for salads, way more satisfying than lettuce! Also, I've done a quick pickle with them, and they turned out great! I grew zucchini in my garden this year, and I've been experimenting a lot!

I tend to eat whatever I'm in the mood for, but my one biggest regret was not listening to my body when I craved spinach and fish growing up. Every time I ate those, my stomach was legit enjoying the food, and it felt "right" to eat it. I didn't continue to eat them because I either forgot they existed or they were too expensive. Come to find out years later, that I'm anemic and my body was telling me that I needed iron bad. So yeah, listen to your body and don't restrict yourself from food that has benefits to your body because Anemia is no joke and can kill you first if the anorexia doesnt do that already.

My mother went through a time period where anything with gluten made her sick, so no noodles, bread, rarely potatoes.. luckily her body is starting to accept wheat products again in recent years, at least on a small scale. Those veggie noodles were great for her, but gosh, she was so happy when she could have her carbs back 😂❤ personally, i love those zuccini/squash/etc noodles a lot for making salads, just make them a little shorter. Makes the salad so fun and really helps to get a nice coating of whatever dressing you use

Zucchini is nice in "Noodle" form because it more evenly distributes the skin imo I toss it in pesto and serve it along side salmon and mashed potatoes

Cutting out almost all carbs and going keto was a key in helping me lose 40 pounds safely and when I got back on carbs I was able to stay in control and not gain any weight back. Not everyone has the same story.

Oooh yes I can’t believe I never thought of that. My dad and his wife love to zoodle, they love pasta and they love zucchini and always grow too much in the garden. But I always found it… unsatisfying. My brain sees the plate and expects starchy carby goodness, and is disappointed when I don’t get it. But mixed zoodles and regular pasta??? That might be a game changer! Sounds delicious! And we can start making progress on the absurd amounts of zucchinis in my dad’s garden. 😭 Lemme know if you have any ideas to use up about half a spaghetti pot’s full of tomatoes per week 😭 the man can never have just ONE tomato plant! I told him he’s gotta start dying them, canning them, or giving them away! We can only eat so much tomato soup!!! 😂 Five adults between the family and we’re STRUGGLING. Grandparents are mixing up a big bowl of marinated tomatoes and mozzarella every week! I’m eating them on every sandwich. Still have some going bad! We have similarly absurd amounts of bell peppers, but those get used. Dad still buys more at the store. I was forced on keto as a teenager, when I moved out of my moms. And I did it so I’d have a place to stay. I already had hypoglycemic. I was extremely miserable and sick for a while.
