Jazza. I had to make 200+ cows using this method for ONE college assignment. You need to remember 2 important factors. The colder the water, the longer the cure time. Also, you have got to get the mix ratio right. A cool way of doing this is putting enough plaster in based on your recipe first. THEN do the island technique. This is where you place some plaster on top of your mix like a little island and if it dissolves into the mix you still don't have the ratio right. Once the island just barely doesn't dissolve, that's when you have a perfect mix. A perfect mix and warm water takes time to learn how to work with because it sets very quickly. But it will come out perfect almost every time.

I feel like we're in the twilight zone and this is a universe where Jazza became his universe's version of 5-minute crafts.

If the plaster is crumbling it means that you're using waaaay too much water. You want to add nearly equal amounts if you want it to be durable. First, put some water in a container and then slowly sprinkle plaster into it until it no longer sinks. That's how you know it's good. The plaster you show in the video has far too much water. It should not be that watery.

As a model/miniature enthusiast I have to say no to this as well. Hot glue is more expensive per gram than plaster is, and there are already hobbyists who strengthen the plaster by adding PVA to it. Visually you will not be able to see what you're working with until it's primed and it will be very easy for the glue's viscosity to result in poor level of detail.

As much as I like you jazza I have to say no to this. As a cosplayer I work with hot glue all the time, it works ok at best. After time it will become sticky again even when you have painted over it, it will collect dust and other particles. It's not fun to touch or putting things on it.
