Pig shoot from enough range to fire three times, aiming for head when it charges. Wolf and bear is better if you have a nailgun ready, best practice is to find a small rocky outcropping/cliff to kite them around it but if you switch to nailgun when it's attacking and mag-dump on the head you should win.
Hit animal with stone pickaxe until you have 30 bone frag. Deer and chicken meat grants 10 instant health when cooked which is very useful for getting back to a fight with full health quickly.

And if you wanna get efficient, you can first harvest it with a bad item, but after you get enough bones, you can just craft a bone knife and get more out of the Rest at least

It just depends on the Animals health if it's attacking or running away from you.
If it's low, it always run away from you.
The problem is, you will only know after you get it's attention first 😂

For early game hunting I would highly recommend using a nail gun. It's silent and kills a bear in like 2 seconds. With a bow you would have to chase it down for a long distance, increasing chances of meeting other players.
