Sprinkle a pinch (Like 1/4 tsp per pound) of baking soda to ground meat as you break it up in the pan. This will reduce the amount of fluids lost during cooking resulting in plumper, juicier grains of meat. (Think: Why does taco bell meat seem "Fluffy")
This process does alter the taste somewhat so I wouldn't recommend it for burgers. In the case of taco meat however, the spices cover for that and the light, pleasant texture of the filling is appreciated.
I actually prefer chewy, grainy ground beef in chilli but for perfect, limpid breakfast burritos the treatment is a must.
It's kind of neat that you have the power to chemically process meat at home like this, and the result is perfectly safe to eat.

Ahhhh! My problem has been Icelandic yogurt. I’ve been buying Great Value. I thought it was weird since I got grass fed, organic, Greek beef, aged cheddar made from monks in the Himalayans, lettuce from the Pleistocene forest, tomatoes from Frank Sinatra’s home garden and flour from the Ming dynasty. Total egg on my face. Sorry, Andrew!
