These students are so fortunate! I had to learn all these tricks on my own😅! Chef Miguel was great for letting me try my experiments and introducing me to new stuff. Y'all are definitely getting a better version of him though! #lovelooksgoodonmychef

Why not just use a knife? When is this ever the right way to do it? Even if youre on the river, had to have a knife to gut it. Ive seen too many escoffier videos showing awful butchering techniques. Where did their chefs learn this stuff? 😂
