3 courgettes
320 g (11 oz) spaghetti
100 g (3.5 oz) parmesan
olive oil, salt
Method:
- Cut the courgettes into thin slices
- Fry the courgettes for 8 minutes in a pan with a little olive oil over high heat (if you want to make them even tastier you can fry them)
- Cook the spaghetti al dente
- Pour 1 or 2 ladles of cooking water into the pan and turn off the heat
- Add the spaghetti and parmesan and mix until it forms a cream
