This might sound like I’m dumbing down whatever’s done in this video, but I did something similar when my husband and I wound up in a small town, and there were no restaurants except for a gas station. I used pepperoni sticks instead of pancetta or bacon, they had eggs, and cheddar cheese stick.

Pecorino > Parmesan. That being said, a 50/50 mix of both is even better. Don't forget the black pepper... coarsely ground. Or better yet... 3-color pepper medley.
