INGREDIENTS
~makes 3 pancakes~

Vegetable pancake
- 4Ā stalks green onion, sliced
- 1Ā zucchini, cut into matchsticks
- 1Ā carrot, cut into matchsticks
- 1Ā small sweet potato, cut into matchsticks
- 1Ā small onion, thinly sliced
- 1Ā jalapeƱo, thinly sliced (optional)
- 1Ā½ cupsĀ all-purpose flour
- 1Ā½ cupsĀ water
- Ā½ tspĀ salt
- 3 TbspĀ vegetable oil, for frying

Dipping sauce
- 1Ā½ Tbsp soy sauce
- 1 TbspĀ rice vinegar
- 1Ā½ tsp gochugaru
- 1Ā½ tspĀ toasted sesame seeds

DIRECTIONS
1. Prep the veggies and add them to a large bowl. Ensure veggies are sliced into matchstick-thin pieces or thinner for proper cooking. The prepped veggiesā€™ total volume should not exceed 6 cups.
2. Then add the flour, water, and salt. Stir to combine.
3. Add a splash of oil to a large pan over medium-high heat. Add a third of the batter to the pan and spread it out into a thin layer. Cook for 3 - 4 minutes, or until the bottom is golden.
4. Meanwhile, make the dipping sauce by combining the ingredients in a small bowl. Set aside.
5. Returning to the pancake, give it a flip. Add more oil to the side of the pan and give the pan a swirl so it reaches the bottom again. Cook for an additional 3 - 4 minutes. Then repeat with the remaining batter.
6. Slice up the pancake and serve with the dipping sauce. Enjoy!

Have you ever met a person who is so strong because they are so gentle? She has a way of changing your perspective by inviting you to do something instead of demanding. And I certainly donā€™t mean to idolize her, but Iā€™ve watched many of her videos and she has strong opinions and convictions but tells you about it in such a sweet and soft voice - you canā€™t but help to figuratively lean in and pay attention. I know, I know, sheā€™s technically only speaking about cutting vegetables but of course sheā€™s giving a mini life lesson. Knife skills and sage advice in under a minute is pretty good.

Love chopping vegetables, it's kinda like meditation, my mind wanders and I relax. I really hate washing green leaves though šŸ˜…

hi there pickuplimes. i followed your channel years ago and forgot about it. iā€™m having a really awful time right now, iā€™ve just gone through a breakup, lost both my jobs, relapsed in my addictions and eating disorder, had someone kill my dog, lost my friend, and am just ultimately incredibly depressed and struggling. a video of yours popped up for the first time in years the other day. the calming vibes of your videos in your beautiful kitchen with beautiful foods actually gave me this whole flood of motivation to cook, clean, take care of myself and my plants, and put some love back into myself. maybe you just see it as your job to make cooking and recipe videos, but for me, i see care, thoughtfulness, colour, inspiration, motivation, calm, and peace. back to my roots of what i love. thank you for reminding me of lifeā€™s simple pleasures and saving me from my nightmare

I love it when food preparation becomes a meditation. Thank you for so eloquently describing this transmutation of the mundane into something sacred. šŸ’•

I feel many people have no patience with preparation of almost anything. So many things are made easier now... precut veggies, etc.... but taking a few moments to do it yourself can feel really good. It ads to the thought that you are taking a bit of time to nurture yourself. With all the crazy in the world... having the ability to simply take time to cut vegetable can be a lovely moment of peace.

After a few years cooking your speed will increase. Many "tedious" jobs become fast and easy. Now I need to be patient again while my son slowly chops the vegetables so he can learnā¤

In the southern part of India, we make a similar pancake called Uthappam, made with fermented rice batter, which is served with coconut chutney and sambar

I really enjoy chopping veggies in my meal prep. There is something satisfying about getting out my clean cutting board, large knife, a bowl for the cut veggies, and a small bowl for scraps. I set up my phone to play a podcast or YouTube video essay and enjoy my quiet time alone in the kitchen ā¤

I love chopping. When i was growing up my aunts would chop the veggies so fast without hurting a finger and i always admired it. When i chop veggies, it takes me back to childhood

I also find this relatable as cutting vegetables seems very chaotic but has its own way of making you calm and peaceful ā¤

I actually really like cutting vegetables lol especially onions. The dipping sauce is usually not so gochu-karu-y. It's usually moslty soy sauce :)
