I’ve been using a combo of: olive oil, lemon juice, honey, and Dijon with a pinch of salt and red pepper flakes to dress quinoa and then instead of adding a dressing to my salads, I add in the dressed quinoa. It’s such an easy way to add in a little something extra and I get little pops of dressing!

I would love this AND to make a Fall version of this too by swapping certain elements for goat cheese, sweet potato, apples, walnuts, choice of protein, quinoa instead of couscous, etc! Will definitely be trying it out! 😊

I make a similar dressing but add some garlic usually roasted, lemon juice and peel, also some herbs usually fresh parsley and or fresh mint or dill.

Maybe that’s a Canadian thing but in the US we generally just call it goat cheese. Looks absolutely delicious! Just thought people might not know what you were talking about.

I have two suggestions here, 1. Blanch your kale 2. Do not mix it if you want to keep it for more day. Keep it seperate and mix and match when you are ready to eat. This will give fresh vibes to the salad, plus you won't get bored eating the same stuff everyday.

Umm pomegranate? Why is nothing but seeds you don’t eat those. You literally have to chew them and spit the seeds out. I don’t think this makes sense. Any way to get another ingredient to replace that one?
